Boy oh boy do we like these! They are a meaty take on a potato cake that makes for a fun mid week dinner.

- Cold mashed potato
- 4tbsp oil
- 1 onion, diced
- 1 large handful of cold chicken
- 3tbsp sweetcorn
- 3tbsp peas
- 2tbsp parsley, chopped
- 1/4 tsp dried tarragon
- Seasoning
- Fine breadcrumbs
- 1 egg
- 2tbsp milk
- 20g flour
Directions
- Heat 1tbsp of oil in a pan and soften the onion. Stir in the cooked chicken. Add the peas, sweetcorn, parsley, tarragon and mash. Stir well to combine. Season to taste.
- Set out 3 plates – seasoned flour, beaten egg and milk, breadcrumbs. Form mixture into balls, flatten in your hands, then dip in plate 1, then 2, then 3. Fry until golden on both sides. Serve with salad.
