- 1tbsp oil
- 2 onions, diced
- 3 garlic cloves, sliced
- 1 thumb sized piece of ginger, grated
- 1 pepper, cut in chunks
- 2tsp cumin
- 1/2tsp turmeric
- 1 ½ tbsp garam masala
- 2tsp cinnamon
- 1 carton chopped tomatoes
- 1 tin coconut milk, plus 1 tin water
- 800g potatoes, diced
- 1 carton chickpeas
- Handful spinach
Directions
- Heat the oil in a pot, cook the onion, garlic and pepper until soft.
- Stir in the spices.
- Add the chopped tomatoes, coconut milk and water, potatoes and chickpeas. Simmer for 1 hour, stir in the spinach and enjoy.
