This is a super easy, fast and yummy lunch or dinner. Although this recipe is for veg, it could easily be rhubarb, apple, etc.

- 1 roll of puff pastry
- 1tbsp oil
- 2 peppers, chopped
- 1 courgette, sliced
- 1 red onion, diced
- 6 shallots, chopped
- 1 aubergine, sliced
- 4 garlic cloves
- 3tbsp sweet chutney
- 4 slices of brie
- 4 slices of goats cheese
- 1 ball mozzarella
- 1/2tsp mustard seeds
- 1/2tsp marjoram
- 1tbsp honey
Directions
- Toss the veg in the oil and herbs and spread on a baking sheet. Cook for 30mins, turning occasionally. Remove and let cool.
- Cut pastry into the biggest circle you can get and place on a baking sheet (preferably a pizza one). Spread the chutney and veg across the base leaving a 11/2inch edge. Crimp the edges to form a sort of dish shape.
- Place the brie and goats cheese on top. Pop in the oven for 20mins.
- Remove, put on the mozzarella and return to the oven for 10mins. Serve with salad.
