This is a twist on leek and potato soup. A blended, lighter version that I came up with for weaning my six month old.

- 1tbsp oil
- 2 large leeks, chopped
- 1 stick of celery, chopped
- 1 garlic clove, chopped
- 6 medium potatoes, chopped
- 1.5 litres vegetable stock
- 1 bay leaf
Directions
- Heat the oil and cook the leeks and garlic until soft.
- Add the potatoes, bay leaf and stock.
- Bring to the boil and then place on the lid and simmer for 30minutes. Remove from the heat and blend.
