- 1tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, crushed
- 1 carton canellini beans
- 1 carton pinto beans
- 1 carton black beans
- 1 carton kidney beans
- 2 cartons chopped tomatoes
- 2tbsp tomato puree
- 3tbsp vinegar
- 2tsp mild chilli powder(use hot if you like a kick)
- 2tsp paprika
- 1tsp sugar
- Rice
- 2 avocados, sliced in wedges
- Kale, sliced and power boiled
Directions
- Heat the oil in a pot. Stir in the onion and cook until browning.
- Add the beans, tomato puree, vinegar, paprika, chilli, sugar and tomatoes and bring to a simmer.
- Serve with rice, avocado and kale.
