Chickpea Roll

A vegetarian roll that everyone will love!!

Serves 4

Oven 200c



  • 1tbsp olive oil
  • 1 onion
  • Handful of spinach
  • 4 large tomatoes, diced
  • 2 cartons of chickpeas
  • 200g sundried tomatoes
  • 1tbsp tomato puree
  • mixed green herbs
  • 200g feta cheese, crumbled
  • Puff pastry
  • 1 egg
  • Seeds for sprinkling


  1. Put the chickpeas, tomato puree and sundried tomatoes in a blender and blitz.
  2. Heat the oil in a pan; cook the onion until soft, stir in the tomatoes, spinach, herbs and chickpea mixture. Lastly, stir in the feta.
  3. Unroll the pastry, layer the mix in a thick line down the center.
  4. Spread the egg along the edges, preserving a little for the top. Turn up the sides and seal in a roll.
  5. Slice into ‘sausage roll’ sizes and place on a baking sheet. Bake for ten minutes.
  6. Serve with salad.
