4 Bean Chilli Bowl

  • 1tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, crushed
  • 1 carton canellini beans
  • 1 carton pinto beans
  • 1 carton black beans
  • 1 carton kidney beans
  • 2 cartons chopped tomatoes
  • 2tbsp tomato puree
  • 3tbsp vinegar
  • 2tsp mild chilli powder(use hot if you like a kick)
  • 2tsp paprika
  • 1tsp sugar
  • Rice
  • 2 avocados, sliced in wedges
  • Kale, sliced and power boiled

Directions

  1. Heat the oil in a pot. Stir in the onion and cook until browning.
  2. Add the beans, tomato puree, vinegar, paprika, chilli, sugar and tomatoes and bring to a simmer.
  3. Serve with rice, avocado and kale.
