Cookie Cake

You like cookies? You’ll lovvvvveeee this. It’s a giant, chewy, sticky cookie cut into big yummy wedges. Your kids are going to love you for this!

Oven 220c



  • 6oz butter
  • 7oz soft brown sugar
  • 1 egg, plus one yolk
  • 2tsp vanilla extract
  • 9oz self raising flour
  • 2tsp corn flour
  • 2tsp baking powder
  • 150g chocolate chips


  1. Grease and line a cake tin.
  2. Cream the butter and sugar.
  3. Add the vanilla and eggs.
  4. Fold in the flours and baking powder.
  5. Stir in the chips and spoon into the tin. Bake for 25minutes.
  6. Leave it to cool in the tin and don’t be alarmed when it sinks in the middle – it’s meant to. Eat warm with ice cream or cold in your hand.
