A mix between soup and stew, I love this rich, fresh and filling soup. Packed with protein, iron and fibre – giving your body all it needs to get you through a bust day.
Serves 8-10
Ingredients
- 2tbsp oil
 - 2 onions, diced
 - 4 garlic cloves, crushed
 - Salt
 - 1tsp turmeric
 - ½ tin cooked green lentils
 - 1 tin chickpeas
 - 1 tin kidney beans
 - 1 tin black eyed peas
 - 1.5litres stock
 - 100g brown spaghetti, broken into smaller lengths
 - 50g baby spinach
 - 15g dill, chopped
 - 15g chives, diced
 - 1 lemon, juiced
 
Directions
- Heat the pan and cook the onions in the oil and salt until caramelising.
 - Stir in the garlic and turmeric.
 - Add the beans, stock, lentils and spaghetti and cook until tender (around 20mins)
 - Stir in the herbs, spinach and lemon. Season to taste and enjoy.
