Lentil Squash Soup

I love nothing more than a lovely warming soup. This has all the anti-inflammatory qualities from fresh ginger and garlic and the amazing super food turmeric. The perfect soup to build immunity for winter.


Serves 6


  • 1tbsp oil


  • 1 onion, diced


  • 3 garlic cloves, chopped


  • 1tbsp fresh chopped ginger


  • 1tsp ground cumin


  • 1tsp ground coriander


  • 1tsp turmeric


  • 300g red lentils


  • 600g peeled, chopped squash


  • 1200ml stock


  1. Heat the oil in a pan and cook the onion until soft.
  2. Stir in the garlic and ginger. Add the spices and stir for 1minute.
  3. Add the lentils, squash and stock and simmer until soft, around 20minutes. Blitz and season.
