Bean Noodle Broth

A mix between soup and stew, I love this rich, fresh and filling soup. Packed with protein, iron and fibre – giving your body all it needs to get you through a bust day.


Serves 8-10


  • 2tbsp oil


  • 2 onions, diced


  • 4 garlic cloves, crushed


  • Salt


  • 1tsp turmeric


  • ½ tin cooked green lentils


  • 1 tin chickpeas


  • 1 tin kidney beans


  • 1 tin black eyed peas


  • 1.5litres stock


  • 100g brown spaghetti, broken into smaller lengths


  • 50g baby spinach


  • 15g dill, chopped


  • 15g chives, diced


  • 1 lemon, juiced


  1. Heat the pan and cook the onions in the oil and salt until caramelising.
  2. Stir in the garlic and turmeric.
  3. Add the beans, stock, lentils and spaghetti and cook until tender (around 20mins)
  4. Stir in the herbs, spinach and lemon. Season to taste and enjoy.
