Date crumble Slice

These remind me of my childhood – those yummy date bars my mum would give me and I couldn’t get enough of them!

 

Makes 10-12

 

Oven 180c

Ingredients

  • 170g medjool dates

     

  • 20g brown sugar

     

  • 50g plain flour

     

  • 80g wholemeal flour

     

  • 80g jumbo oats

     

  • 30g desiccated coconut

     

  • 1tsp pink salt

     

  • 90g vegan butter

Directions

  1. Put the dates and sugar in a small pot, just cover with water and simmer until soft enough to mash to a paste – around 10mins.
  2. Meanwhile, mix all the dry ingredient, rubbing the butter in with your fingers until breadcrumbs. Press half the crumble into the base of a lined brownie tin, spoon the paste over the top and sprinkle the remaining crumble over, pressing lightly.
  3. Pop in the oven for 40mins. Leave to cool and then slice.
