This curry is really fast to put together and perfect for an easy weekend curry or a mid weeker
Serves 4-6
Ingredients
- 1 onion, diced
- 1 thumb piece of ginger, peeled and grated
- 5 sweet potatoes, peeled and chopped
- 2 potatoes, chopped
- 1tsp fenugreek
- 2tsp all spice
- 2tsp garam masala
- 2 tins chickpeas, rinsed
- 2tins coconut milk
Directions
- Heat oil and cook onion and ginger for 1min.
- Add all remaining and bring to a simmer for 20mins.
