I love a good curry and this one is no exception. It is packed with protein rich chickpeas and full of flavour but ready in minutes.
Serves 4-6
Ingredients
- 2tbsp oil
- 2 onions, diced
- 3 garlic cloves, chopped
- 1tsp turmeric
- 1tsp coriander
- 1tsp garma masala
- 250g cherry tomatoes, halved
- 2 cartons chopped tomatoes
- 2 cartons chickpeas
- 1 can coconut milk
Directions
- Heat the oil in a pot and cook the onion and garlic until soft.
- Stir in the spices.
- Add all remaining ingredient and bring to a simmer. Serve with rice and salad
