Spicy Vegetable Stew

This is a punchy, protein packed stew that will keep you warm on a winters night.

 

Serves 6

Ingredients

  • 1tbsp oil

     

  • 2 onions, diced
  • 4 garlic cloves, chopped

     

  • 1 thumb sized piece of ginger, grated

     

  • 1tbsp thyme

     

  • 1tsp cinnamon

     

  • 1tsp smoked paprika

     

  • 2tsp ground coriander

     

  • 2tsp cumin seeds

     

  • 2 packs of chopped tomatoes

     

  • 700ml vegetable stock

     

  • 2 peppers, diced

     

  • 2 sweet potatoes, peeled and chopped

     

  • 2 large carrots, halved and sliced

     

  • 2 packs of kidney beans

     

  • Rice to serve

Directions

  1. Heat the oil in a pot and cook the onion until soft. Stir in the garlic, thyme and ginger.
  2. Stir in the remaining spices. Add all remaining ingredient, pop on a lid and bring to a simmer for 40mins. Serve with rice and salad
