This soup has a bit of a bite to it. It is bursting with spicy flavours without the burn. A welcome change.
- 1tbsp oil
- 2 red onions, chopped
- 2 red peppers, chopped
- 1 small squash, peeled and chopped
- 4 garlic cloves, in skin
- 2tsp cumin
- 1tbsp ground coriander
- 1ltr stock
- Toss the veg on a tray with the herbs and oil. Place in the oven and roast for 40mins, turning occasionally.
- Put into a pot, along with the stock and bring to a simmer. Blitz and enjoy
