Pepper and Squash Soup

This soup has a bit of a bite to it. It is bursting with spicy flavours without the burn. A welcome change.


Oven 200c


  • 1tbsp oil


  • 2 red onions, chopped


  • 2 red peppers, chopped


  • 1 small squash, peeled and chopped


  • 4 garlic cloves, in skin


  • 2tsp cumin


  • 1tbsp ground coriander


  • 1ltr stock


  1. Toss the veg on a tray with the herbs and oil. Place in the oven and roast for 40mins, turning occasionally.
  2. Put into a pot, along with the stock and bring to a simmer. Blitz and enjoy
