One Tray Chicken and mozzarella Bean Stew

One tray – need I say more??


Serves 4-6


Oven 180c


  • 3tbsp oil


  • 8 chicken thighs


  • 3 onions, sliced


  • 1 leek, sliced


  • 6 tomatoes, chopped


  • 3 garlic cloves, whole


  • 100g curly kale


  • 1 tin butter beans


  • 1/4tsp thyme


  • 1/4tsp rosemary


  • 1 mozzarella ball, sliced


  1. Heat the oil in a casserole dish. Stir in onions and leeks and cook until soft. Add chicken and cook until browning. Add tomatoes and garlic cloves. Stir in the kale, removing any large stalks. Add the butter beans in juice. Season and stir through the herbs.
  2. Stir and cover, pop in the oven for around 90mins. If it seems dry, add a little stock or water.
  3. Around 10mins before serving, remove lid, place mozzarella slices on top and place until hot grill until bubbling and golden. Serve with salad.
