Ingredients
- 1tbsp oil
- 2 onions, chopped
- 2tbsp any curry paste
- 500g parsnips, chopped
- 200g red lentils
- 1.3ltr veg stock
- Seasoning
Directions
- Heat the oil in the pot and cook the paste and onions until softening.
- Add all remaining ingredient and simmer with a lid for 20minutes. Blitz and enjoy.
