This chunky, heart soup is perfect for the colder nights.
- 1tbsp oil
- 8 sausages, cut in chunks
- 2 onions, diced
- 4 carrots, sliced
- 2 packets of puy lentils
- 1ltr of veg stock
- Heat the oil in a pot and cook the sausage until browning.
- Stir in the onion and carrot and cook until soft. Add the puy lentils and stock. Simmer for 20mins and serve.
