Curried Lentil and Parsnip Soup

Soup with a little spice warms your soul in winter time. Give this one a go.


Serves 4


  • 1tbsp oil


  • 2 onions, chopped


  • 2tbsp any curry paste


  • 500g parsnips, chopped


  • 200g red lentils


  • 1.3ltr veg stock


  • Seasoning


  1. Heat the oil in the pot and cook the paste and onions until softening.
  2. Add all remaining ingredient and simmer with a lid for 20minutes. Blitz and enjoy.
