Herby Avocado Hummus

Hummus is one of those things that you can have with chopped veg as a snack, loaded into a wrap or spread on toast. It is perfect for most occasions. Here is one with a twist.


Serves 10


  • 1 avocado, flesh removed


  • 1 tin of chickpeas


  • 6tbsp tahini


  • 5tbsp fresh lemon juice


  • 1 garlic clove, crushed


  • 1/2tsp cumin


  • 15g coriander


  • 2tbsp olive oil


  • 1tbsp pumpkin seeds


  • Seasoning


  1. Put everything in a blender, except the olive oil and seeds, and blitz.
  2. Add the olive oil and blitz again until creamy.
  3. Transfer to a serving bowl and top with seeds. Keeps in the fridge for 4 days.
