A brilliant healthy snack, packed with energy releasing ingredient.
- 150g pistachio
- 10 dates, pitted
- 1tbsp lime juice
- 1tbsp coconut oil
- 1/2tsp almond extract
- 170g almond flour
- 1tbsp lime zest
- 6tbsp desiccated coconut
- Place the pistachios in a food processor, blend into small pieces, transfer to a bowl.
- Now add the dates, lime juice, coconut oil and almond extract. Blend until smooth.
- Add the mixture to the nuts, along with the almond flour and lime zest.
- Using your hands, mix to combine. Roll into balls and roll in coconut.
