Pistachio and Lime Energy Balls

A brilliant healthy snack, packed with energy releasing ingredient.


Makes 12


  • 150g pistachio


  • 10 dates, pitted


  • 1tbsp lime juice


  • 1tbsp coconut oil


  • 1/2tsp almond extract


  • 170g almond flour


  • 1tbsp lime zest


  • 6tbsp desiccated coconut


  1. Place the pistachios in a food processor, blend into small pieces, transfer to a bowl.
  2. Now add the dates, lime juice, coconut oil and almond extract. Blend until smooth.
  3. Add the mixture to the nuts, along with the almond flour and lime zest.
  4. Using your hands, mix to combine. Roll into balls and roll in coconut.
