Potato and Quinoa Soup

I love a good soup and this one is warm and hearty.


Serves 6


  • 125g dried quinoa


  • 1tbsp olive oil


  • 1 onion, diced


  • 1 carrot, chopped


  • 1 red pepper, chopped


  • 1 green pepper, chopped


  • 1 potato, chopped


  • 1 sweet potato, chopped


  • 3 garlic cloves, crushed


  • 1tsp smoked paprika


  • 1tsp cried oregano


  • 3tbsp flour


  • 360ml almond milk


  • 360ml veg stock


  • 1tbsp tamari


  • 2tbsp fresh lemon juice


  1. Cook the quinoa according to instructions, drain and set aside.
  2. Meanwhile, heat the oil in a pan, add the onion and cook for 5minutes. Next add the carrot and peppers and cook for 5 more minutes. Now add the potato, sweet potato, garlic, spices and flour, cook for 2 minutes.
  3. Add the almond milk, tamari and stock, bring to the boil, then reduce and simmer for 20minutes.
  4. Stir through the lemon juice, season and serve topped with quinoa.
