A wonderful lunch or light dinner option.
- 225g chickpeas
- 3tbsp hummus
- 2tbsp almond milk
- 1tbsp lemon juice
- 1/4tbsp curry powder
- 1tsp maple
- ¼ red onion diced
- 4 slices wholewheat or rye toast
- 2tbsp coriander, chopped
- Toss the chickpeas in a bowl and mash with a fork. Add all remaining ingredient.
- Toast the toast and serve spread on top with a sprinkle of coriander.
