Curried Chickpea Toast

A wonderful lunch or light dinner option.

 

Serves 2

Ingredients

  • 225g chickpeas

     

  • 3tbsp hummus

     

  • 2tbsp almond milk

     

  • 1tbsp lemon juice

     

  • 1/4tbsp curry powder

     

  • 1tsp maple

     

  • ¼ red onion diced

     

  • 4 slices wholewheat or rye toast

     

  • 2tbsp coriander, chopped

Directions

  1. Toss the chickpeas in a bowl and mash with a fork. Add all remaining ingredient.
  2. Toast the toast and serve spread on top with a sprinkle of coriander.
