Chickpea and Couscous Salad

Perfect for lunch on the go or a light dinner with some flat bread.


Serves 4


  • 90g couscous


  • 1 tin chickpeas


  • ½ cucumber sliced


  • ½ red onion, diced


  • 150g cherry tomatoes, halved


  • 200g rocket


  • 4tbsp hummus



  • Dressing – 1tbsp apple cider vinegar


  • 1tbsp lemon juice


  • 1tbsp olive oil


  • 1tsp maple


  • 1tsp Dijon mustard


  1. Cook the couscous according to instructions.
  2. Mix the dressing and set aside.
  3. Mix all remaining ingredient, add the couscous and toss in dressing. Split between four.
