Ingredients
- 90g couscous
- 1 tin chickpeas
- ½ cucumber sliced
- ½ red onion, diced
- 150g cherry tomatoes, halved
- 200g rocket
- 4tbsp hummus
- Dressing – 1tbsp apple cider vinegar
- 1tbsp lemon juice
- 1tbsp olive oil
- 1tsp maple
- 1tsp Dijon mustard
Directions
- Cook the couscous according to instructions.
- Mix the dressing and set aside.
- Mix all remaining ingredient, add the couscous and toss in dressing. Split between four.
