Super Green Soup

Packed with iron to help with energy and focus and beans for fibre.

 

Serves 4

Ingredients

  • 1tbsp olive oil

     

  • 2 garlic cloves, crushed

     

  • 2tsp cumin

     

  • 600ml veg stock

     

  • 1 broccoli head, chopped

     

  • 200g spinach

     

  • 1 tin cannellini beans

     

  • 4tbsp chopped coriander

     

  • Seasoning

Directions

  1. Heat the oil in a pot. Add the garlic and cumin and cook for 1min.
  2. Add the broccoli and stock and simmer for 10minutes. Add all remaining ingredient and cook for a further 10minutes. Blitz. Enjoy.
