Ingredients
- 1tbsp olive oil
- 2 garlic cloves, crushed
- 2tsp cumin
- 600ml veg stock
- 1 broccoli head, chopped
- 200g spinach
- 1 tin cannellini beans
- 4tbsp chopped coriander
- Seasoning
Directions
- Heat the oil in a pot. Add the garlic and cumin and cook for 1min.
- Add the broccoli and stock and simmer for 10minutes. Add all remaining ingredient and cook for a further 10minutes. Blitz. Enjoy.
