A really lovely lunch packed with fibre and protein to keep you going through the afternoon.
- 1tbsp oil
- 2 garlic cloves, chopped
- 1 tin butter beans
- 2tbsp plant based yoghurt
- 2tsp harissa
- 1 lime, juiced
- 2 slices wholemeal bread
- Parsley to sprinkle
- Heat the oil in a pot, add the garlic and a pinch of salt and cook for 2-3mins.
- Now add the beans and cook for 5minutes. Lastly stir in the harissa, yoghurt, lime and mix well.
- Toast your bread and spoon on top, with a sprinkle of parsley.
