Harissa Butter Bean On Toast

A really lovely lunch packed with fibre and protein to keep you going through the afternoon.

 

Serves 2

Ingredients

  • 1tbsp oil

     

  • 2 garlic cloves, chopped

     

  • 1 tin butter beans

     

  • 2tbsp plant based yoghurt

     

  • 2tsp harissa

     

  • 1 lime, juiced

     

  • Seasoning

     

  • 2 slices wholemeal bread

     

  • Parsley to sprinkle

Directions

  1. Heat the oil in a pot, add the garlic and a pinch of salt and cook for 2-3mins.
  2. Now add the beans and cook for 5minutes. Lastly stir in the harissa, yoghurt, lime and mix well.
  3. Toast your bread and spoon on top, with a sprinkle of parsley.
