Broccoli and Turmeric Soup

This soup is full of antioxidants and anti-inflammatory properties from the ginger and turmeric, a perfect winter option to boost your immunity and give your body a helping hand.

 

Serves 6

Ingredients

  • 2tbps sesame oil

     

  • 350g chopped leeks

     

  • 2tbsp grated ginger

     

  • 2 head of broccoli, chopped

     

  • 1tsp turmeric

     

  • 1tsp salt

     

  • 1tsp pepper

     

  • 1.5litres veg stock

Directions

  1. Heat the oil in a pot and stir in the leeks, cooking for around 8minutes until soft.
  2. Add all remaining ingredient and let simmer with the lid on for 20minutes. Blitz and enjoy.
