Edamame Rice Salad

A lovely fresh salad for packed lunch or a light dinner.

 

Serves 2-4

Ingredients

  • 150g edamame beans

     

  • 1tbsp sesame oil

     

  • 1tbsp maple

     

  • 1tbsp mirin

     

  • 1 lime, juiced

     

  • 1 avocado, diced

     

  • 1tbsp sesame seeds

     

  • 1tbsp nigella seeds

     

  • 150g brown rice, cooked

Directions

  1. Cook the rice and set aside.
  2. Mix the dressing ingredient together and pour over the beans. Mix in the rice. Store in the fridge.
