A lovely fresh salad for packed lunch or a light dinner.
Serves 2-4
Ingredients
- 150g edamame beans
- 1tbsp sesame oil
- 1tbsp maple
- 1tbsp mirin
- 1 lime, juiced
- 1 avocado, diced
- 1tbsp sesame seeds
- 1tbsp nigella seeds
- 150g brown rice, cooked
Directions
- Cook the rice and set aside.
- Mix the dressing ingredient together and pour over the beans. Mix in the rice. Store in the fridge.
