A lovely warming winter soup.
Serves 6-8
Ingredients
- 1tsp oil
- 2 onions, diced
- 4 garlic cloves, chopped
- 2 large carrots, chopped
- 2 large parsnips, chopped
- 1tsp dried thyme
- 1.5litres stock
- Seasoning
Directions
- Heat the oil in a pot and cook the onion and garlic until soft.
- Stir in the thyme, carrots, parsnip and stock. Cover and simmer for 30mins.
- Blitz and season.
