Carrot and Parsnip Soup

A lovely warming winter soup.

 

Serves 6-8

Ingredients

  • 1tsp oil

     

  • 2 onions, diced

     

  • 4 garlic cloves, chopped

     

  • 2 large carrots, chopped

     

  • 2 large parsnips, chopped

     

  • 1tsp dried thyme

     

  • 1.5litres stock

     

  • Seasoning

Directions

  1. Heat the oil in a pot and cook the onion and garlic until soft.
  2. Stir in the thyme, carrots, parsnip and stock. Cover and simmer for 30mins.
  3. Blitz and season.
