Pumpkin Soup

It’s that time of year again and as ever, what do you do with that pumpkin? This soup is deliciously creamy and a one pot wonder.


Serves 6


  • 1tbsp oil


  • 1 onion, chopped


  • 3 garlic cloves, chopped


  • 2 carrots, chopped


  • 1 potato, chopped


  • 300g peeled pumpkin, chopped


  • 1/2 tsp nutmeg


  • 750ml veg stock


  1. Heat the oil in a pot and cook the garlic and onion for a few minutes.
  2. Add all remaining ingredient and simmer for 30mins. Blitz and enjoy.
