It’s that time of year again and as ever, what do you do with that pumpkin? This soup is deliciously creamy and a one pot wonder.
Serves 6
Ingredients
- 1tbsp oil
- 1 onion, chopped
- 3 garlic cloves, chopped
- 2 carrots, chopped
- 1 potato, chopped
- 300g peeled pumpkin, chopped
- 1/2 tsp nutmeg
- 750ml veg stock
Directions
- Heat the oil in a pot and cook the garlic and onion for a few minutes.
- Add all remaining ingredient and simmer for 30mins. Blitz and enjoy.
