Chickpea, Sweet Potato Quinoa Salad

This is a lovely sweet salad that is fantastic warm or cold.

 

Oven 200c

 

Serves 2-3

Ingredients

  • 1 red onion, cut in wedges

     

  • 1 white onion, cut in wedges

     

  • 2 sweet potato cut into wedges

     

  • 1 tin chickpeas, rinsed and dried

     

  • 2 tbsp oil

     

  • 100g quinoa, cooked

     

  • Handful wilted spinach

     

  • 50g almonds

     

  • 2tbsp soy

     

  • ½ lemon, juiced

     

  • 2tbsp maple

     

  • 1tbsp almond butter

Directions

  1. Mix the onions, wedges and chickpeas in 1tbsp oil, season and roast in the oven for 40mins.
  2. Meanwhile cook the quinoa.
  3. Heat the remaining oil and soy in a pan and add the almonds and spinach. Stir in the roasted veg, quinoa and heat through. Stir in the maple, lemon and almond butter.
