This is a lovely sweet salad that is fantastic warm or cold.
Oven 200c
Serves 2-3
Ingredients
- 1 red onion, cut in wedges
- 1 white onion, cut in wedges
- 2 sweet potato cut into wedges
- 1 tin chickpeas, rinsed and dried
- 2 tbsp oil
- 100g quinoa, cooked
- Handful wilted spinach
- 50g almonds
- 2tbsp soy
- ½ lemon, juiced
- 2tbsp maple
- 1tbsp almond butter
Directions
- Mix the onions, wedges and chickpeas in 1tbsp oil, season and roast in the oven for 40mins.
- Meanwhile cook the quinoa.
- Heat the remaining oil and soy in a pan and add the almonds and spinach. Stir in the roasted veg, quinoa and heat through. Stir in the maple, lemon and almond butter.
