One Pot Vegan Curry

Such an easy mid week meal that tastes amazing!!

Serves 4

 

Oven 200c

Ingredients

  • 2tbsp oil

     

  • 2 onions, diced

     

  • 4 garlic cloves, crushed

     

  • Thumb ginger, chopped

     

  • 4tbsp curry powder

     

  • 1tsp turmeric

     

  • 4 cardamon pods, crushed

     

  • 1 cinnamon stick

     

  • 600ml vegetable stock

     

  • 200ml coconut milk

     

  • 80g peas

     

  • 100g green beans, chopped

     

  • 1 cauliflower marinated in 3tbsp oil, 1tbsp smoked paprika, 1tsp garlic powder

     

  • Handful raisins

Directions

  1. Firstly, mix the marinading ingredient and toss the cauliflower, spread on a baking sheet and bake for 20mins.
  2. Heat the oil in a pot, cook the onion, garlic and ginger until browning.
  3. Stir in the spices. Stir in the rice. Add the stock, coconut milk, peas, beans, cauliflower and raisins. Bring to the boil, turn down and simmer with the lid on for 20mins. (Top with quorn chicken pieces of you like)
