These remind me of my childhood – those yummy date bars my mum would give me and I couldn’t get enough of them!
- 170g medjool dates
- 20g brown sugar
- 50g plain flour
- 80g wholemeal flour
- 80g jumbo oats
- 30g desiccated coconut
- 1tsp pink salt
- 90g vegan butter
- Put the dates and sugar in a small pot, just cover with water and simmer until soft enough to mash to a paste – around 10mins.
- Meanwhile, mix all the dry ingredient, rubbing the butter in with your fingers until breadcrumbs. Press half the crumble into the base of a lined brownie tin, spoon the paste over the top and sprinkle the remaining crumble over, pressing lightly.
- Pop in the oven for 40mins. Leave to cool and then slice.
