Gardeners Salad

I love a big bowl of lovely green veg. This can be more than a salad, side it with wraps and tossed new potatoes and you have dinner.

 

Serves 4-6

Ingredients

  • 250g green beans, trimmed and halved

     

  • 500g tender stem broccoli, cut into 2cm pieces

     

  • ¼ cabbage shredded

     

  • 8 radish, sliced

     

  • 4 spring onions, sliced

     

  • handful mint, chopped

     

  • Dressing – 4tbsp oil

     

  • 1tbsp Dijon mustard

     

  • 1 lemon juiced

Directions

  1. Toss the radish, mint, spring onions and cabbage together.
  2. Boil the beans and broccoli for 4 mins, drain. Toss everything together with the dressing.
