I love a big bowl of lovely green veg. This can be more than a salad, side it with wraps and tossed new potatoes and you have dinner.
Serves 4-6
Ingredients
- 250g green beans, trimmed and halved
 - 500g tender stem broccoli, cut into 2cm pieces
 - ¼ cabbage shredded
 - 8 radish, sliced
 - 4 spring onions, sliced
 - handful mint, chopped
 - Dressing – 4tbsp oil
 - 1tbsp Dijon mustard
 - 1 lemon juiced
 
Directions
- Toss the radish, mint, spring onions and cabbage together.
 - Boil the beans and broccoli for 4 mins, drain. Toss everything together with the dressing.
