Sweet Potato and chickpea Curry

This curry is really fast to put together and perfect for an easy weekend curry or a mid weeker


Serves 4-6


  • 1 onion, diced


  • 1 thumb piece of ginger, peeled and grated


  • 5 sweet potatoes, peeled and chopped


  • 2 potatoes, chopped


  • 1tsp fenugreek


  • 2tsp all spice


  • 2tsp garam masala


  • 2 tins chickpeas, rinsed


  • 2tins coconut milk


  1. Heat oil and cook onion and ginger for 1min.
  2. Add all remaining and bring to a simmer for 20mins.
