Stewed Maple Beans

These beans are the fasted week night dinner ever! Sweet and packed with protein. Give them a go served up with creamy mash (to make it vegan use a plant based milk and butter)

 

Serves 4

Ingredients

  • 1tbsp oil

     

  • 1 carrot, diced

     

  • 1 onion, diced

     

  • 1 stick celery, diced

     

  • 1tbsp thyme

     

  • 2tsp flour

     

  • 200ml veg stock

     

  • 1 tin black beans

     

  • 1 tin kidney beans

     

  • 1tbsp maple

Directions

  1. Heat the oil in a pot and cook the onion, celery and carrot until soft.
  2. Stir in the flour and remove from heat.
  3. Add the thyme, stock and beans. Pop on the lid and simmer for 20mins.
  4. Finally stir in the maple. Serve with creamy mash and salad.
