These beans are the fasted week night dinner ever! Sweet and packed with protein. Give them a go served up with creamy mash (to make it vegan use a plant based milk and butter)
- 1tbsp oil
- 1 carrot, diced
- 1 onion, diced
- 1 stick celery, diced
- 1tbsp thyme
- 2tsp flour
- 200ml veg stock
- 1 tin black beans
- 1 tin kidney beans
- 1tbsp maple
- Heat the oil in a pot and cook the onion, celery and carrot until soft.
- Stir in the flour and remove from heat.
- Add the thyme, stock and beans. Pop on the lid and simmer for 20mins.
- Finally stir in the maple. Serve with creamy mash and salad.
