Crispy Vegan Slaw

Slaw is a big weakness of mine and since going vegan I had to come up with a lovely alternative and this is nothing short of lush!

Ingredients

  • 3 carrots, grated

     

  • 1 red onion, thinly sliced

     

  • ¼ red cabbage, thinly sliced

     

  • black onion seeds to dress

     

  • Dressing –

     

  • 2tbsp cider vinegar

     

  • 1tbsp sesame oil

     

  • 1tbsp olive oil

     

  • 1tsp Dijon mustard

     

  • 1tsp tahini

Directions

  1. Mix the dress in a small bowl and set aside.
  2. Grate and slice all veg then mix well in a big bowl. Top with the dressing and mix by hand until thoroughly covered
