Hot, spicy, filling – what more do we want in a soup?
- 1 tin of chopped tomatoes
- 1 garlic clove, crushed
- 1tbsp harissa paste
- 1 carton kidney beans
- 1 carton butter bean soup
- 1litre stock
- 100g couscous
- ½ lemon juiced
- Put the chopped tomatoes, garlic and harissa in a pot and heat.
- Add the beans and stock and simmer. Remove from heat and blitz.
- Re-heat, stir in the couscous and lemon. Serve with a scattering of coriander.
