Couscous Soup

Hot, spicy, filling – what more do we want in a soup?

 

Serves 4

Ingredients

  • 1 tin of chopped tomatoes

     

  • 1 garlic clove, crushed

     

  • 1tbsp harissa paste

     

  • 1 carton kidney beans

     

  • 1 carton butter bean soup

     

  • 1litre stock

     

  • 100g couscous

     

  • ½ lemon juiced

Directions

  1. Put the chopped tomatoes, garlic and harissa in a pot and heat.
  2. Add the beans and stock and simmer. Remove from heat and blitz.
  3. Re-heat, stir in the couscous and lemon. Serve with a scattering of coriander.
