I love a good granola. I had a packet of buckwheat groats in the cupboard and had no real idea how to use them and then I got word that they worked in granola. It doesn’t get much better than that does it! So here is my latest morning, mid day and evening nibble.
- 200g buckwheat groats (I bought organic ones in Lidl)
- 40g desiccated coconut
- 100g mixed seeds
- 3tbsp coconut oil
- 3tbsp honey
- 2tsp vanilla paste
- 2tbsp cinnamon
- 40g dried cranberries
- Put the honey, oil, cinnamon and vanilla in a pot and melt.
- Mix all remaining ingredients. Stir in the melted mix and spread onto a baking sheet. Bake for around 15mins. Leave to cook completely.
