Vegan Pesto

Since my recent skin flurry I have been doing a food elimination diet and one of those foods was dairy. But pesto is one of my families favourite pasta sauces so I had to find a way around that, and I have.

 

This sauce is so flavoursome and you don’t even miss the cheese.

 

Serves 4-6

Ingredients

  • 150g toasted pine nuts

     

  • 2 small bunches of basil

     

  • 150ml GOOD olive oil

     

  • 3 lemons, juiced

     

  • Seasoning

Directions

  1. Pop everything in a blender and blitz. Cook your pasta and toss in the sauce. Any remaining, jar it up and use it for another occasion.
