Smokey Chickpeas

These smokey beans are the perfect mid week meal for busy families. They can be made ahead of time and the flavour just deepens.

 

Serves 4-6

Ingredients

  • 1tbsp oil

     

  • 3 onions, diced

     

  • 2 cartons chickpeas

     

  • 2 cartons chopped tomatoes

     

  • 1 carton pasatta

     

  • 3tbsp maple syrup

     

  • 3tbsp red wine vinegar

     

  • 2tbsp smoked paprika

Directions

  1. Heat the oil in a pot and cook the onion until soft.
  2. Add all remaining ingredient and bring to a simmer for 20mins. Serve with rice, baked potatoes or on toast with fried eggs.
