These smokey beans are the perfect mid week meal for busy families. They can be made ahead of time and the flavour just deepens.
Serves 4-6
Ingredients
- 1tbsp oil
- 3 onions, diced
- 2 cartons chickpeas
- 2 cartons chopped tomatoes
- 1 carton pasatta
- 3tbsp maple syrup
- 3tbsp red wine vinegar
- 2tbsp smoked paprika
Directions
- Heat the oil in a pot and cook the onion until soft.
- Add all remaining ingredient and bring to a simmer for 20mins. Serve with rice, baked potatoes or on toast with fried eggs.
